Turkey Chili with White Beans

Yield: Serves 8

1 T olive oil
2 cups diced yellow onion
1 1/2 tsp oregano
1 1/2 tsp cumin
1 T minced garlic
1 1/2 T chili power
1/2 tsp cinnamon
1 lb lean ground turkey
1 28oz can diced tomatoes
3 bay leaves
3 cups beef stock
2 15 oz cans white beans, rinsed, drained
1 15 oz can pinto beans, rinsed, drained
1 can tomato paste
1 liberal squirt of Sriracha sauce (optional)

Heat oil in a large pot over medium heat. Add onions and saute until light brown and tender, about 10 minutes. Add spices and stir for 1 minute. Increase heat to medium high and add ground turkey. Cook until no longer pink, breaking up with back of spoon. Add tomatoes and bay leaves. Stir in stock and add beans. Bring to a boil and reduce heat. Simmer 25 minutes stirring occasionally. Add in tomato paste a little at a time to thicken up the Chili to desired consistency. Add Sriracha sauce if you like spicy chili!

Chili can be garnished with with shredded cheese, jalapenos, diced onions, and sour cream as desired
